Sugarless Banana Bread

Instructions
  1. Peel bananas and place on a parchment-lined baking sheet.
  2. Roast in an oven heated to 450ºF for 15 to 20 minutes, or until the fruit begins to turn light golden brown on the bottom.
  3. Place bananas in a high-speed blender (or food processor) with eggs. Blend to mix.
  4. Add remaining ingredients, blending until well mixed.
  5. Spread batter into a large (9 x 5) loaf pan, sprayed with nonstick coconut oil spray or lined with parchment.
  6. Bake in an oven preheated to 350ºF for 45 to 50 minutes, or until the center springs back when touched lightly.
  7. Remove and cool slightly before turning out of the pan.
