Quick and simple, this paleo blender soup tastes like fall. Creamy butternut squash soup is topped with crispy bacon and zesty chives. Great for dinner, it’s also wonderful the next day for lunch leftovers.

Instructions
  1. In a large skillet, heat coconut oil over medium-high heat. Toss in butternut squash and garlic, cooking until squash is tender.
  2. Transfer to a high-speed blender or food processor.
  3. Add chicken broth and 1/2 cup coconut milk. Blend until smooth.
  4. Salt and pepper to taste.
  5. If using a Vitamix or other high-speed blender, blend on high until steaming.
  6. If using a food processor, return puree to a pan and heat until very hot.
  7. Serve topped with a drizzle of coconut milk, bacon and chives.
