Turmeric Roasted Cauliflower
A little spicy and big on taste, this crispy oven-roasted cauliflower has a surprisingly nutty and earthy flavor. Make it tonight as a side with grilled meat, toss in your salad, or serve with chickpea and quinoa for an easy vegan meal.

Instructions
  1. Preheat oven to 400ºF
  2. Melt coconut oil in the microwave or on the stovetop.
  3. Place cauliflower and garlic on a small parchment-lined baking sheet. Drizzle with coconut oil. Sprinkle with turmeric, salt and pepper, tossing until coated.
  4. Roast for 20 to 25 minutes, stirring every five minutes or so, until tender and some edges begin to turn a light golden brown.
  5. Garnish with parsley.
