Banana Chocolate Chia Pudding Parfait
This rich and delicious chocolate chia pudding contains an all-star list of ingredients (hello peanut butter and chocolate!) but also packs 30 grams of satiating protein.

Chocolate Banana Chia Pudding Parfait
Instructions
  1. In a small bowl, stir together ½ cup coconut milk, maple syrup and chia seeds. Set aside.
  2. In a second small, microwave-safe bowl, melt chocolate chips and 1/2 coconut milk together. Whisk in protein powder, if using.
  3. Place in a hi-speed blender with rolled oats, almond milk and vanilla, blend until pudding-like in texture.
  4. Spoon chocolate mousse mixture into the bottom of a parfait glass.
  5. Top with peanut butter, bananas and chia seeds.
  6. Garnish with rawnola or cacao nibs.
  7. Enjoy immediately.
Recipe Notes

Refrigerate any unused portion and eat within 24 hours for best results.
