  1. Heat a large pan over medium heat.
  2. Add 1 teaspoon of sesame oil, the garlic and ginger. Cook for 30 seconds. Add the quinoa, remaining 2 teaspoons of sesame oil, aminos, and salt and pepper to taste. Cook for 3-4 minutes or until warm.
  3. Divide the quinoa between two bowls.
  4. Wipe out the pan with a paper towel.
  5. Place 2 teaspoons sesame oil in the pan.
  6. Add the thinly sliced vegetables in batches and cook for 2-4 minutes or until tender. Season to taste with salt and pepper.
  7. Arrange the vegetables on top of the quinoa.
  8. Wipe out the pan and add the spinach leaves along with 1 teaspoon of water. Cook, stirring occasionally, until spinach is wilted.
  9. Divide the spinach among the two quinoa bowls.
  10. Add the green onions and sesame seeds to the bowls and top each with a sunny side up egg. Season to taste with salt and pepper and serve.
  11. Add a dollop of Korean chile paste if desired.
