Rainbow Veggie Kabobs on the Grill

Grilling season traditionally means a lot of meals for meat lovers, but it’s also a great time to lighten your eating habits and enjoy some serious plant-based goodness.

If you’re eating alkaline, paleo, or vegan, you’ve likely run into the problem my wife Amy and I often face: there aren’t a lot of foodie-approved recipes out there you can trust.

Sure, you can pop a processed veggie burger on the grill, but have you checked the ingredients list on those packages lately? They’re chock full of additives that may pass as “vegan” but they sure as heck don’t pass as “real food”.

Instead of tossing processed food on the barbie, let’s grill up some whole food instead.

Seasonal fruits and veggies are abundant this time of year. Skewer them onto a wooden stick and suddenly you’ve got the simplest and most stunning side dish you’ve ever made, all with a list of ingredients you can pronounce.

These veggie kabobs are a great way to get kids to try veggies that may be unfamiliar to them. Simple, colorful, and delicious, these veggie skewers are an awesome way to celebrate healthy, life giving food, without feeling like you’re missing any of the summer BBQ fun.

Instructions
  1. Cook purple potatoes and sweet potato in a microwave or oven just until tender (about 4-6 minutes in a microwave, or 20 minutes in an oven preheated to 350 degrees F). Cool and slice into bite-sized chunks.
  2. Thread veggies onto wooden skewers in this order: purple potatoes, purple onions, eggplant, zucchini, sweet potato, corn, pineapple, red peppers, and tomatoes.
  3. Place skewers on a parchment-lined baking sheet.
  4. In a small bowl, whisk together coconut oil, honey, apple cider vinegar, garlic, chipotle powder, and salt. Drizzle over the skewers and allow skewers to marinate for 1 hour (or up to overnight).
  5. When ready, place skewers on a hot grill and cook until golden brown and piping hot.
Recipe Notes

To keep your skewers from burning when grilled, soak in a large pan of water overnight.
